Spinach and Artichoke Grilled Cheese

 4 oz frozen chopped spinach, thawed and squeezed dry
 1 cup chopped canned artichoke hearts, patted dry
 3 oz cream cheese, at room temperature
 ¾ cup shredded mozzarella cheese
 ¼ cup grated Parmesan cheese
 ¾ tsp garlic powder
 ¼ tsp ground pepper
 8 slices whole-wheat sandwich bread
 3 tbsp extra-virgin olive oil, divided

In a large bowl, combine spinach, artichokes, cream cheese, mozzarella, Parmesan, garlic powder, and pepper. Mix until well combined.

Evenly spread the spinach-artichoke mixture onto 4 slices of bread, using about 1/2 cup for each. Top with the remaining bread slices.

In a large skillet, heat 1 1/2 tablespoons of olive oil over medium heat. Place 2 sandwiches in the skillet and cook until golden brown and crispy, roughly 3 minutes per side.

Flip the sandwiches and continue cooking until the cheese is melted and the filling is heated through, another 2-3 minutes.

Repeat the process with the remaining oil and sandwiches.

  • For an even creamier texture, you can add a touch of mayonnaise or Greek yogurt to the mixture.
