4 oz frozen chopped spinach, thawed and squeezed dry
1 cup chopped canned artichoke hearts, patted dry
3 oz cream cheese, at room temperature
¾ cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
¾ tsp garlic powder
¼ tsp ground pepper
8 slices whole-wheat sandwich bread
3 tbsp extra-virgin olive oil, divided
1
In a large bowl, combine spinach, artichokes, cream cheese, mozzarella, Parmesan, garlic powder, and pepper. Mix until well combined.
2
Evenly spread the spinach-artichoke mixture onto 4 slices of bread, using about 1/2 cup for each. Top with the remaining bread slices.
3
In a large skillet, heat 1 1/2 tablespoons of olive oil over medium heat. Place 2 sandwiches in the skillet and cook until golden brown and crispy, roughly 3 minutes per side.
4
Flip the sandwiches and continue cooking until the cheese is melted and the filling is heated through, another 2-3 minutes.
5
Repeat the process with the remaining oil and sandwiches.
6
Serve hot and enjoy!
Special Notes & Tips:
- For an even creamier texture, you can add a touch of mayonnaise or Greek yogurt to the mixture.
- Feel free to add some chili flakes or hot sauce if you prefer a spicy kick.
- These sandwiches pair wonderfully with a side of tomato soup or a fresh green salad.
