Dry Ingredients:
 1 ¾ cups all-purpose flour
 1 ½ tsp baking powder
 ½ tsp baking soda
¼ tsp pink salt or sea salt
1 tsp cinnamon (optional for added flavor)
Wet Ingredients:
cup neutral oil (like coconut, avocado, or grapeseed)
cup organic cane sugar or coconut sugar
cup almond milk or any plant milk of choice
 1 tsp vanilla extract
 4 ripe bananas, mashed (about 1 ½ - 1 ¾ cups)
Add-ins (optional):
½ cup chopped walnuts or pecans
½ cup vegan chocolate chips or dried fruit
1

Preheat your oven to 350°F (175°C). Lightly grease or line a 9x5 inch loaf pan with parchment paper.

2

In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon (if using).

3

In a separate bowl, combine the oil, sugar, almond milk, and vanilla extract. Add the mashed bananas and mix until well combined.

4

Pour the wet mixture into the dry ingredients. Stir gently until just combined, ensuring not to overmix. If you're using any add-ins like nuts or chocolate chips, fold them into the batter.

5

Transfer the batter to the prepared loaf pan, spreading it out evenly. Place in the oven and bake for 55 – 65 minutes, or until a toothpick inserted in the center comes out clean or with a few crumbs.

6

Once baked, remove the bread from the oven and let it cool in the pan for about 15 minutes. Afterward, transfer it to a wire rack to cool completely.

7

Slice the cooled banana bread and enjoy with your favorite vegan butter or jam.

Notes & Pro Tips:

  • Ripening Bananas: If your bananas aren't ripe enough, place them in a brown paper bag overnight. This will speed up the ripening process.
  • Storage: Store the banana bread in an airtight container at room temperature for up to 4 days. For longer storage, refrigerate or freeze.
  • Variations: Feel free to experiment with other add-ins like coconut flakes, dried fruits, or even a swirl of vegan nut butter for a different flavor profile.
  • Moisture Tip: For an extra moist bread, you can add a flax egg (1 tbsp ground flaxseed + 2.5 tbsp water, let sit for 10 minutes) to the wet ingredients.
